premium dark wine grapes.
Its agro dolce flavour lends itself to both savoury and
sweet dishes, making it a versatile addition to your pantry. Whether you want to flex your culinary skills or use it
straight from the bottle – vinocotto can be used in
almost any way.
Simply pour it on to your favourite meats, cheeses,
fruits and desserts – or use it as a show stopping ingredient
to your favourite roasts, stews, glazes, sauces and marinades.
The natural sugars from our vinocotto will caramelise and enhance any dish it is in, adding a distinct new depth of flavour.

SOME THINGS ARE BETTER UNCHANGED
A true labour of love - our vinocotto is made the
true artisanal way, only using the finest of ingredients.
The best vinocotto comes from the best grapes, so that is why we only use late harvest Australian wine grapes.
Late harvest grapes naturally dehydrate on the vine,
making the grapes sweeter and more fragrant.
Although this limits our batch production, it ensures
that we produce the most indulgent and
fragrant vinocotto possible.
Each batch of grapes we use are hand-pressed and
reduced for up to 16 hours, ensuring that every
last drop has been condensed and caramelized
to produce the thick, sweet syrup that people have
coveted since Ancient Roman times.

HOW AN ANCIENT RECIPE SAILED TO MELBOURNE
Long ago on a tiny island north of Sicily,
the harvesting and preserving of grape must was a
sacred annual tradition to the Maccora family,
While there are many variations of vinocotto available,
the Maccora recipe has remained the same since
Ancient Rome – staying unchanged due to their
island home's remote location.
After travelling across the world to Australia,
the Maccora family kept the artisanal tradition
of making vinocotto well and truly alive -
using the same techniques their ancestors used
long ago on that tiny island.
Under the guidance of her mother and grandfather,
today our vinocotto is made by Marissa in Melbourne’s
south-east. While still a stickler for old traditions,
Marissa hopes to bring old-style vinocotto out of
Nonna's kitchen and to a new generation of
