Straight from Mama Maccora's kitchen - this is the tastiest roast lamb you will ever make!
1 medium leg of lamb (on bone)
½ cup of olive oil
1 cup water
½ cup Maccora Vinocotto
3 tablespoons of sea salt
Preheat over to 150. Add olive oil to a baking tray and heat over stove on medium heat. Once oil is hot, sear the lamb on the tray – constantly turning the lamb over to ensure each side is seared. Once the lamb is evenly golden on all side remove from heat. Add cup of water to the bottom of the pan, then pour cup of vinocotto over the lamb, evenly coating the top of the meat. Sprinkle sea salt on top of vinocotto.
Roast in the oven for between 4-5 hours depending on the size of the roast. Serve with natural yoghurt and hot bread
