These light, fluffy and zesty pancakes are the perfect treat to start a lazy weekend
3/4 cup self raising flour
1/4 teaspoon salt
2 tablespoons sugar
1 cup ricotta cheese
2/3 cup milk
1 orange, zested
Berries of your choice
Combine the flour, salt and sugar. Whisk together the ricotta, eggs, milk and orange zest in a large bowl. Whisk the flour mixture into the wet ingredients until combined.
Pour the mixture onto a hot buttered frying pan and cook on both sides until golden brown.
Serve with yoghurt, berries and vincotto drizzled on top.
